A truly wonderful and unique opportunity to join a beautiful 19th Century Castle Hotel located near Fort William. The hotel has been voted top 5 in the World with a 3AA Rosette Restaurant and impeccable grounds. The hotel now needs its very own world class Sous Chef so please get in touch if you think this could be you!
As Sous Chef you will act as Head Chef in their absence. You will be in constant communication with all kitchen departments ensuring the smooth running of the kitchen. You will be approachable and inspiring, you will create a strong team around you from chefs to kitchen porters to service staff ensuring their wellbeing and happiness at all times.
- To build and maintain excellent relationships with Restaurant Management team.
- Outstanding food knowledge
- You will be an approachable and positive role model to all kitchen and restaurant staff
- Outstanding presentation, flavour and design of dishes
- Follow company guidelines
- Ensuring budgets are followed well managed
- To consistently prepare and cook all food to the standards and dish specifications, and train the team to do the same
- To work together with the restaurant team to ensure guest satisfaction, to handle complaints effectively and promptly
- To ensure the kitchen is fully prepared, stocked and set for service at the correct times
- To be responsible for the performance of the whole kitchen team and the delivery of quality food at all times
- To be the role model of the kitchen, constantly striving to exceed customer expectations
- To recruit supervise and train new members of staff
- To coach and mentor the kitchen team
- To ensure the performance of the kitchen is at the highest standards
- Conducting annual appraisals to team, praising and recognising excellent performance
- Weekly management meetings, ensuring feedback from prior meetings
- To ensure that your kitchen team understands the correct preparation, cooking, presentation & service of food
Essential Skills & Requirements:
- Sous Chef in 3AA Rosette Restaurant and/or Michelin Star Restaurant
- Track record of being an inspirational Sous/Head Chef
